Default Major Oil Loss

I have a base model 2005 (LS2),

I recently made a 1200 mile road trip. After 600 miles, I had to add 2 1/2 quarts of oil. When I got home I did the same thing.
there is no oil dripping anywhere. No oil saturating the intake area (pcv ok). No oil in the radiator. There is A LOT of black soot/carbon/exhaust going out the mufflers.
I have done a compression check and that looks ok. I should do a leak down test but from my understanding it to check heads/valves for leaks.
I guess the "wiggle" test is obsolete to check the valves but if they do wiggle(significantly) would that still mean something?
I'm not sure if I'm right to assume the valves or guides are the issue. What am I missing?

"Wiggle" test is for LS7 engines.

If you have a lot of miles on your car, it could be leaking valve seals. Not a bad idea to replace them just in case and its cheap and easy.

Most likely problem however is the PCV system. LS motors from the LS1 through the LS3 went through several revisions of valve covers mainly for changes to the PCV breathers in the covers.

If I were you, I would replace the valve covers with a new set. LS3 covers will fit. Or you could upgrade to a set of Holley valve covers and add in line PCV valves. Dorman makes replacement covers but you could also get a used LS3 set off of eBay.
