The fan was missing, and the radiator and ac condenser were toast. Replaced all those and the thermostat but it's overheating. Fan comes on. Not sure coolant is circulating. Hardly added coolant to the reservoir. Air in the system? Does it need a vacuum? Thoughts?

The cooling system has a capacity of ~3 gallons. You should have lost around half that when replacing the radiator. If you didn't put ~1.5 gallons back in, there's still air in the system, which is pretty common.
A vacuum fill is best, but you usually get there by topping off the surge tank as it burps itself over the course of a warm-up cycle. Don't bother running the heater because there's no heater valve.
