Can anyone explain why the C7 has narrow tires/rims...
And how this thing is going to pull more G's than a Grand Sport?

Word is that Michelin has helped out GM with some pretty amazingly sticky tires that allow for improved performance with smaller tires. Pretty cool if the performance is as good as advertised... smaller wheels/tires means less rotational inertia, less unsprung weight, and better hydroplaning resistance.

I will be using the stock Z51 set up for the track and get some nice forged wheels for the street. 20x11 tire with nitto invo 315's should fit just fine and fill out the gap :-)

One thing I've noticed in all types of racing, is when you want more traction, you go with the skinniest tire you can find. NASCAR has asked Goodyear to tool up some 185/85-15 tires so they can get the speeds up in the corners. John Force asked for some skinny slicks for his funny Car, as he was blowing the tires off the wide tires he's been using.
Plus skinny tires just look great stuck under a wide fender.

True, but my understanding was that they were still acceptable street use tires. If they really had a super short life, then they wouldn't be very impressive. They might as well be DOT race tires.

And that "huge" GS 325mm rear tire is only 1.57 inches (14%) larger than the 11.22" wide 285mm on the stock C7, not such an earth shattering difference.
Tire contact patch area is only part of the equation, the down force and coefficient of friction between the tire and surface are also a tad important

The Michelins that come with the non-Z51 car have a tread rating of 300. That is great, and they will last longer than previous generation factory Corvette tires. So, they are stickier, weigh less (unsprung weight), and are quieter than the previous Goodyears, and, they last longer. Win/win/win/win.
