The side window visibility is very limited. You will need to adjust your mirrors properly and it will become a non-issue. If you are prone to spinning your head around and looking out a window before you maneuver with the car, you will either need to modify that behavior or get used to spending some time in body shops.
When backing out of my garage into a busy urban street, I really rely on my C6's rear visibility. Side view mirrors are of little help in that regard. I wonder if the convertible will be any better when the top is up.
The C6 does have better visibility with that big greenhouse window. For me personally, the visibility is the least I have to get used to. There are so many new things to learn. I rely on proper mirror adjustment so the C7 is actually much easier backing because of the camera and while driving no real drama.

The blind spot on the left and right rear corners is larger than the C6. You should not change lanes without checking the side mirrors anyway. It is not a big deal.
There's a huge blind spot when looking back over your right shoulder. The side windows are for looks and not for looking through. It will take a little getting used to.
The blind spot over your shoulders through the rear quarter is at least as large as Kansas, maybe even Oklahoma. As Talon 90 said, get used to using properly adjusted side mirrors or get a body shop really well. With a little practice, it is really a nonissue.
However, I am really surprised that the visibility through the rear window with the interior center rear view mirror is actually excellent. See separate post re: my first encounter with a North Carolina Highway Patrolman.

from what I saw of the C7 convertible, it's not all that different from the C6 re side and rearward vision. with the top up on my C6, there is huge 3/4 rear "spot". it isn't blind if you know how to look around it. but when you enter a street at an angle, you really have to line up a little differently to provide yourself with line of sight. it's "learn-able." in that respect, maybe the convertible is different from the coupe.
