Out for a leisurely drive with the wife today and had the temp **** on the left set to all the way down to low, but made sure the AC light was off, and the image on the screen said the AC was off.
Parked in the garage, and as I was dusting the car off, I heard something sizzling, as if it were on frying/on fire. I look under neath and water is dripping on the passenger side, directly onto the cat converter.

Based on info from this and a couple forums, as well as a little experimentation on ours, turning temp down to Lo forces the AC compressor on, even if the light and panel show it off. Put the temp on the lowest number, 61 on our car, and turn off the AC, and it seems like the compressor is off. Don't turn it all the way to Lo.

Exactly. Mine does the same. Set to lo with AC button to off: compressor is on! Set to 61 degrees or higher, you can then manually turn the compressor on or off manually.

It took a while to figure out how to get the compressor to disengage. I thought the PCM and HVAC reflash might correct this but it didn't. I suspect many C7's will be driven around topless all summer with the compressor running even though the indicator light says it's off. So much for efficiency
I was about to ask the same question....was wondering how come it the air coming out of the vents was so cool when the AC light was off (but the temp was set to LO" GM - Really???? How about a reflash so the owner is in control of the temp and not the car?!?!?!
