So out here is SLC, UT, we have a sports track, (Miller Sportspark) and once Wednesday every month you can take your car (my C7 Z51) to the track. They do say you cannot take a convertible to the track with roll bar or factory roll protection. I'm hoping someone can give me some guidance here.
What do you want guidance on? No track I know of will allow a vert on the track without some kind of rollover protection, which the C7 vert doesn't have. The current open road races (BBORR, Sandhills Challenge and Silver State Classic) don't allow verts to run in the upper speed classes without rollover protection either.
I took my C6 coupe to open track days and ran those open road races, but knew when I traded it in on a C7 vert I knew my racing days were over, at least for now.

That's called an open track day or lap day. I've never seen a track that allows verts without rollover protection. Pushing a vert hard on a track wearing only factory shoulder belts wouldn't be either safe or smart IMO.
There were some SCCA time trial rules that only required a removable hard top on a convertible. But there have been some race car rules that require a removable hard top over a roll cage. The idea is that the roll cage digs into the ground and therefor should have a smooth top over it.
