I found this the other day and saved it for future reference. My car has not arrived yet, so I can not validate this to be correct.
New found leg room.
I have had my seat all the way back in travel and tilt. I noticed that there was still some room behind the seatback and the carpet behind the back rest. There is a way to get the seat to travel further back AND recline further as well.
1. Move the seat to its full forward position.
2. Pull the carpet out that sits behind the back of the seat so that the rear bulkhead is exposed.
3. You will find a black plastic wire channel that routes wires to the rear of the car.
4. On top of that channel you will find a clear flexible strip about 1 1/2" wide that runs from the bottom of the bulkhead to near the top. Unplug the small 2 wire connector near the top of the strip and secure it so that it does not rattle.
5. You will now no longer be limited in seat travel or tilt and can squeeze some valuable additional leg room out. This applies for both seats.

Mine had that issue and I disconnected the switch as described above. Fixed it until the dealer got the new one and installed it. Don
The seat will move back farther if you adjust it while not sitting in it. I'll move it all the way back (while standing outside the car), when it stops, pull on the headrest a bit to take a little pressure off the back of the seat and you'll be able to get another "click" out of the rearward adjustment.

To answer the original question...unplug it!
Seriously though, I did this for a friend's C7 and measured the seat distance before and after and found no change. I'm not sure why, but that was the result.
With my seat all the way back, reclined to my comfort, the seat back is touching the rear bulkhead, firmly. Unplugging the sensor in my case would gain nothing...the seat can not go back any further.
At 6'2", I don't need more space...I am very comfortable...but as a skeptic, I was curious as to whether this would give any more space. It won't/can't. And I think it may risk damage to your seat motor. It might, if you continually try to force the motor to push the seat against the bulkhead.
The seat adjustment for most legroom, as has been stressed here in multiple threads, is tricky in terms of getting the most rear travel. You HAVE to move the seat well forward, drop the seat bottom to the lowest position (if you need the headroom), move it back to rearmost travel, then recline. If you want more recline, bump the seat forward, recline a bit, repeat as necessary.
