Don't know why it would. everything is still turning at the same RPM, the computer just isn't allowing fuel & spark to 4 of the 8.
IDK if the controlling code alternates which cylinders are firing...
It apparently was set up to always cut out the same cylinders in V4 mode, which I thought odd also. The only reason I could think of why that would be done is if they have some dedicated valves to open up the cylinders to allow them to freewheel in the mode. I doubt it's simply cutting fuel and spark, as that would incur pumping losses that would negate the savings.

The valves don't open, they close when in V4 mode. That way you don't get pumping losses. Since it takes dedicated hardware to do this, it is only on 4 cylinders to save money and weight (that's a guess on my part). As well, you can't do it on any 4 cylinders, it has to be ones that let the engine run with a certain degree of balance.
Even if it only gives a very small amount of fuel savings, that would be enough for GM to use it. Meeting overall corporate fuel economy goals is getting tougher all the time and anything a manufacturer can do to get there, they will.
I have a lot of elevation changes during my daily commute. I've found that I get good gas mileage in V4 mode. However, the car is constantly slowing down and jumping back into v8 mode when cruise it set. Given that, I find I have better results leaving it in SPORT mode and 7th gear instead. This is what I will do from now on.

I too get best gas mileage in touring mode in 7th gear without the 4 cylinder mode. 32 mpg on last trip. On totally level ground the V4 is a little better for me but just the incline up and over the interstate interchanges and especially on long inclines of even the slightest uphill, the 4 cylinder mode is a lot less mileage than the regular 8.
