When I leave my car, I lock it and have the windows up, but that's just a habit I've always had, regardless of the car I'm driving. No sense putting the temptation out there.
At car shows though, I leave the top off and the windows down and never had any problems with someone messing with the car.

Wow, I always leave my top/windows down when I go anywhere. Never once a problem and I only drive the car when I can have the top/windows down. I lock any valuables up but the fact of the matter is if someone wants to trash your car they're going to do it windows up or down.
