So I am thinking of purchasing a 2015 convertible and I am wondering about storage. We sat in a coupe at the local dealer yesterday and saw there is no glove box and the console is small. I was wondering where does everyone put their insurance paperwork and such?
I remember that Chevy had an accessory for the C6 that was basically a pouch that mounted behind the seat. I looked and couldn't find anything like that for the C7.

Not sure how, but you missed the glove box--all the C7's, convertible and coupe, have the same glove box and it fits the owners manual with room to spare. The center console is just about worthless because it's so shallow--useful to plug in and charge your phone via USB, I guess.
No room behind the seat in the convertible unless you don't want to be able to put the seat all the way back--my exit position is the seat fully back. Trunk's not bad--with the partition down, I carried two rolling suitcases back from my museum delivery (need to be 10" or less deep--most bags labeled international carryon should fit) with room to spare. This is the suitcase I bought:

As all have said, there is a glove box (decent size) but it does not have the "traditional" pull handle in the middle, but rather a push button on the upper left. It obviously served it's design purpose with you in making it less obtrusive.
Never take the wife's word with anything concerning an automobile.
She looked for a release button and didn't see one, I'm guessing. Its easy to miss, I missed it too at first glance. And like so many things on this car, its computer controlled... if the computer isn't happy, you don't get in. Just like the doors and rear hatch, the infotainment hidden compartment, the gear shift on automatics, the 1-4 skip shift on manuals, the fuel door, etc..
So Elaine and I went to a city close by (name omitted to protect the guilty) and we sat in a 2014 convertible with regular seats. The local car we sat in on Saturday was a 2015 and it had the competition seat which we thought were pretty uncomfortable. The car we sat in today had the regular seats and we thought they were comfortable though. There was a 2015 convertible there too but the salesman was to busy to open it for us until I said the service sucks and we are leaving... Anyway, we found the glove box and in my wife's defense, the little button is pretty easy to miss. We also found there is a little niche behind each seat in the convertibles big enough for a box of Kleenex. We didn't buy the car as we were about $1,000 off from where I wanted to be and neither would budge. It's the old thing of their car is worth more than book but my 2012 GS coupe with 7,000 miles isn't worth what the book says I think I will try to sell the car local and then I can go anywhere to buy a car including forum vendors which are too far away to work a trade deal with. Sorry to be rambling, but who else will understand
Keep looking. I tried to buy a new 2014 one year ago with a similar outcome. They offered $3k less for my trade than KBB (against sticker on the C7).
The initial demand for 2015 C7's is on the downswing so dealer "in stock" vehicle deals will improve.
I got one of the latter 2014's built (July) that had been setting in a very small dealership showroom until December. It's a crystal red convertible with 3 miles on the clock, 3LT w/ Z51, auto, chrome wheels, MMRC, NPP, & more. Sticker was $79k & the dealer wanted $71k before my credit union discount. I got $2k above KBB for my trade, GM gave a $500 rebate, and my insurance company gave me another $500.
I just checked KBB & if I traded today I'd only take a $3k loss.
