Is it possible to put the C7 in touring mode but have dash display the Sport mode configuration?

Yes you can. You need to "unlink" the display to the Driver Mode selection. This link describes how to link them, so unlinking them is similar: Linking IP Gauges to Driver Mode Selector

Bingo. Once you unlink from drive mode, you can simply select "Sport" mode. Your gauges will then stay in Sport regardless of your driving mode. It's a great option.
