I bought my last corvette a C6 GS from inventory because it was optioned exactly the way I would have ordered it. I recently ordered a C7 and was wondering how to track the car without bothering or becoming a pain in the *** to anyone?

GMConnects has been down for a while and the Chevy chat from their website only has access to partial information and it's sometimes outdated. The only real way to track your status in real time is to ask your dealer. At least that's what the lady on the live chat told me. Honestly you're spending 60-80k on a car, I think you're entitled to be a bit of a PITA when it comes to staying up to date on the status of your order.

Chevy Chat is deft not up to the minute. They were still showing my car as about to be built when it was already in transit to Kerbeck. I also asked them to sign me up for their weekly email status report and I took delivery this past Saturday and have yet to receive an email.
If you purchase from Kerbeck, they have a link on their website that they update at least once a week with the current status of your order and it's more up to date than what Chevy Chat will have.
If you decide to purchase from another dealer, ask them if they have this feature available. Once the car is built and a VIN is assigned, ask your dealer to turn on OnStar and you will be able to track your car on a map via the OnStar app for smartphones for 48 hours after the last engine start. Comes in handy if your car is being delivered by truck, you can track it for 2 days and have some idea where it's at. If it's being stored (bayed) until they have a carrier load of 11 vettes ready to go or if going by train, this probably will not be a beneficial feature.

Frankly, your dealer is the one that should provide this information to you. Let your dealer know that you will use the information updates as part of your evaluation when you get the delivery survey. Make sure they understand that getting an excellent score requires adequate communication with you during the entire process.

Your dealer has access to the up-to-date information - make them earn their what they are going to make on the sale.

GREAT Recommendation. I will use this tactic as my TPW gets closer.
