$399 for a day? That's crazy high. Just go shopping for one and the salesguy will let you take it out for an hour or two.
I don't know of a single dealer who allows test drives. All C7's I've seen come in owned and their owners do not want any additional miles on their cars. I know I didn't want any additional miles on mine!
Before ordering mine I rented two Vette, both from Hertz. One in Las Vegas. The next from SFO. Both times ~ 250/day, 100 free miles and like $0.25/milethereafter. First time I had ~$85 in over mileage charges so watch out for that.
You will not get an M7 - only automatics. Go for the A8.
Rented one in Vegas. Best way to test a car you wanna buy. Very very expensive rental if you factor in the C7 in my garage. Rented a '15 911S last summer and thinking about moonlighting as a pimp and/or drug dealer to pad my income so I can afford a P car.

Not sure about the test drive policy at all the dealers, but many of the larger dealers (and sometimes even a smaller dealer that got a C7) keep non-sold units in stock.
I suppose that would work too.. but would to chill for a day with it without the saleguy in the passenger seat haha..
Here's my story! One of my groomsman, as a wedding present, rented a base C7 from Hertz for 3 days for me. ($700 dollars for the rental, I believe) Even after four months, my time with the car kept coming back to me, and so I started looking for a used vehicle to test drive. I found one in Dallas, made the call and put down a small refundable $500 deposit to show my interest on the vehicle. As I live in Houston, I told the salesmen I would like to take an extended test drive to have the vehicle checked out by an independent mechanic and to get a feel for the car. I never planed on buying it that day, but after a 3 hour "test drive", I wrote him a check and never returned the keys!
