I use a nice black plush steering wheel cover that I got at PEP Boys for about 10 bucks. Keeps the wheel pristine, improves grip, and is barely noticeable.
My red stitching is fine so far after 6500 miles, but I've often thought about what you say. So I wash my hands before I get in the car and I never handle the stitches. It's one of the things I do for my Corvette.
I doubt that a 2016 wheel would be provided under warranty. GM typically will provide only parts for the model year of the car being covered. Similarly, they wouldn't honor a warranty claim with a black widget if the was originally equipped with blue ones.
