On a C7 dash board when in sport mode there is an arrow pointing to the left next to the oil temp and another arrow point to the right next to the water temp. sometimes they are lite. the manual does not say what they are for????

I actually don't know what they do or if they "do" anything. I did notice they scroll up and down when changing the display mode to different features such as;
When changing the display from sport to track, then selecting "performance" or when you select "info" for the thumb-up/thumb-down selections. They are positioned horizontally on each side of the display and move up and down following your selection. -- sorry if it sounds a bit confusing but I don't mess with it too much as I always seem to screw up the center display and can't remember how to get back !

If you are talking about what I think you are, its just an indicator you can use the keypad under your right thumb to navigate/change options.

Should see them on all screens.

When the left or right arrow is white, it means that if you push the respective button on the right steering wheel spoke you will have additional choices available to you. When one of these arrows is gray, it means that there are no additional choices in that direction.

Those pocket gauges can be changed using the steering wheel key pads. As mpuzach mentioned, when the arrows are "illuminated" there are options.

Some of the options are HP, trans temp, oil pressure, etc.
