I find the electronic e-brake a cool feature. Though, I find that it is generally more work and worry than a standard pull bar.
For instance, I tend to be too fast for it occasionally. (In a rush or w/e) and tell it to engage while also shutting the engine down. This basically leads it to not engage at all.
I find myself leaving the car in gear, as the primary safety choice along with engaging the brake, though, I could have a better peace of mind if there was a 'tell' on the brake.
Is there any way to tell when the brake is engaged when the car is completely off?
Just pull up on the switch, if not on it will put it on
Yea... and I do. It's more or less, I think they should have made the button have a dull amber light or something. It's not that I forget to do it, and I put the thing in a gear, so it's safe but I have no way of actually telling that it's on.
As long as you haven't opened the door yet, the ebrake symbol on the dash will, I'm pretty sure, light up when the brake is on, even if you've shut off the engine. And if the engine is off, I can hear the ebrake engaging or disengaging.

I use the ebrake when at stop lights with a little hill. Just hit the gas to disengage and move forward.

I'm trying to picture how you hit the ebrake and push the off button at the same time...

Do this - hit the stop button. Look at the main screen. Flick the ebrake up. Watch the "Park" blink on the main screen and then go solid. Check that you are in gear (I prefer first), then open the door to exit the vehicle. It's not that difficult.

I feel somewhat the same way, would be nice to have an indicator when the car is off. Also I have always driven standard shift cars as a DD and do not keep it in gear when parked, old habit. So I have more risk, except we're so flat around here I don't worry!
Would be nice to have a "Tell," as you call it, like being able to define if there is one in the chamber on a semi automatic!

You don't need to do that. The (M7) C7 has HSA "Hill Start Assists"
The brake is automatically applied on a hill, and will hold the car for ~2 seconds after you take your foot off the brake pedal.
Concur - you'll hear the brake apply.
If you don't, and the the screens are still on, you'll see the lamp (or not).
If the screens are off, tap the start button. If the Park lamp isn't lit, pull the park button, wait for the lamp to illuminate, then turn the car off. Takes 10 seconds

I've always driven manuals and have always parked in gear for added security. I've seen too many loose parking brakes, and grew up in an area called "Hillcrest Heights."

This is correct. If you leave the door closed and the engine is off the light on the dash will come on if you pull up on the e-brake. Or, you can pull up and listen for the e-brake to engage.

Oh I am well aware of that. However, if you just happen to be stopped at the stop light with a little hill and the light is gonna go for a minute or two you need to be in neutral and have your foot on the brake. Instead put the gear selector in neutral, hit the ebrake and relax your feet from having to depress the clutch and the brake. Try it! You'll like it!
IOW, there's no reason, if you're gonna be stationary for more than 2-4 seconds to not simply engage the ebrake and relax.
(OK maybe not 4 seconds but I know of a number of stop lights that I know that a hellva long time and sometimes I'm on a hill. I just hit ebrake and take my feet off the pedals. YMMV).

I agree it is what should be done but "back in the day" it was thought if it was left in gear and someone bummed into the car it could break a trans part! I recall with my '41 Coupe having to park on a hill and turning the wheels to the curb and keeping it in gear! But other times just used the emergency brake. No hills where I live now in Eastern SC!
