IIHS insurance loss data shows that the Corvette (2011-2013 - latest data available) does very well. In the top 1 or 2 for several categories. First chart is overall ratings for Sports cars. All others are Best Overall:
Don't know the exact measurement, but the seat bottom is power adjustable up and down in front and rear to allow for drivers of different heights. It can also be tilted up and down in the front and rear. It's one of those things you really need to check out at your local dealer to make sure you can adjust it to fit your height and desired driving position.

With the Driver seat raised to it's highest point, and all the way back, to Exit the car, the part where your butt sits is 10 Inches from the Ground.
The Front part of the Bottom of the seat, where your legs rest is a couple inches higher.
From it's highest setting it can go about 2 inches Lower
But as you move the seat forward to a driving position the whole seat goes up a slight incline raising the Whole seat.
So at any given setting, the part of the Seat bottom your butt rests on, can be between 8 - 12, maybe 13-14 Inches at the most, from the Ground.

If you're really worried about a crash, the seat height should not be the concern! Do you think the body frame is all that strong? Suggest you get a racing roll cage and a 5 point harness like I have in my Prostreet Rod!

If you're expecting the C7 to stand up to a full size SUV in a crrash then I'd look to another vehicle for safety. The height of the SUV vs the low height of. Corvette or almost any other sports cars isn't a good match. Corvettes hav come a long way in terms of safety, but a 5000+ Lb SUV vs a 3500 lb C7 doesn't come out favorably for the C7. It's one of those match ups you hope you don't see. If certainly isn't deterring my desires to buy a Z06, but is in the back of my mind.

WOW! I bought my C7 (as well as all my other cars) to drive, not to crash. I drove a '70 VW Bus for 10 years (1970 to 1980) and did just fine. I am not going to drive my C7 constantly worrying about crash tests. Defensive driving with adequate separation and situational awareness.
