As you go higher in number, the less aggressive. However even my least aggressive numbers are decent (a bit more aggressive than oem Z51 wheels to bring wheel/tire outboard to fender.
Even the most aggressive with work with 295's in rear ***depending on your ride height, and tire brand.
285's will be a slight stretch in the rear, 295's-305's will be flush with wheel but 305's will depend on tire brand, ride height and work best with the least aggressive listed offsets.
Front must be Forgestars least concave offering, rear will be the "semi concave". Keep in mind you can order Forgestars to the exact 'mm' desired.

I'm thinking about running 275/35 fronts and 315/35 rears on stock c7 z51. Would this work?

For the rear setup, that will put the tire (dependent on tire brand, some have more aggressive sidewall than others) about +15mm (+/-) outboard and inboard from the current oem tires on the Z51.
You need to measure based on what I gave you and find out, but a 315 is pushing it for sure.
For the fronts, same +15mm outboard and +15mm inboard from stock.

Since you're going 1" wider than stock your best bet is to stay with the stock +56mm front and +79mm rear offsets. This adds .5" to both the inside and outside of the wheel from its centerline. Going with less offset moves the wheel that much further out away from the chassis and may cause fender lip interference with wider tires

I have read in many places that a 19x11 rear wheel with a 73mm offset will work just fine and keep the wheel in the fender and not rub the inner well. Is this true? Has anyone ran this setup?
i ran a 19x11 with a 315 hoosier tire with a 83mm offset and it fit with no rubbing. forgeline wheels. a 79mm will work from what i have calculated but its close

It's gonna be really close, and come down to what tire you choose (what width and how beefy the sidewall is (varies by brand/tire).
