Called ChevyChat to see where my 2016 is in the build process. He said that it was "in the shipping process". I asked him to clarify as to whether that meant it had actually shipped or not and he said that was the only information he had. Can the dealer find more accurate information than this? I've heard nothing from the salesman since he has been ill.

Yes, the dealership will be able to get you the most up-to-date current information. My dealer was able to tell me exactly what day to expect my delivery.

To be honest, my salesman sucked. I only used this dealership for their allocations and Corvette Tech, definitely NOT for their sales people.
ChevyChat gave me the most up-to-date info (I know, that is not the case with most people here). I knew when the car was finally shipped (rail) from ChevyChat, my salesman never notified me.

I may be paranoid but I get the impression that they are deliberately holding out on me so I won't be breathing down their necks to get the delivery inspection done after it arrives. Wish there was a way to get around my dealership because I'm not currently overwhelmed with their performance. At one point, I left two messages with the service manager to call me and he never bothered.

You have to be persistent, you owe no loyalty to that dealership, bug 'em!
My salesman never notified me of anything, even when the ordering manager ordered the transparent roof which was NOT signed off by me.
They ate that one ($1,000).
BUT my car was built 9/15/14 (again notified only by ChevyChat) and my salesman emailed me end of Sept. asking would I sign a paper delivery?
Uhhhh, NO!
Never notified when my car was actually shipped finally to Selkirk, NY
(10/20/14), arrived 10/27/14. Salesman notified me 10/30/14, would I come ASAP and sign for the car for his Oct. sales. Ummm, NO!
I went Nov. 1st to get the car, was waiting since Aug. 1st order.
This is just my experience, and I was not on these forums at that time.
I've since learned SO much from everyone here.
Hope you bug your dealership/sales manager and get answers TODAY!

Once the car hits 4200 shipped, Chevy chat is pretty much done with it. Your dealer can track it from there, they have all the tools they need to do so.

I didn't know how long the salesman was going to be out sick
so I called the sales manager. Like going from night to day. He was in my 'Vette when I called getting it ready to go. I have no idea how long it had been since it had come in but I'll be going to pick it up on Thursday.

Is there any way that I can go online and find the same information as to when it will arrive at the dealership, or is the dealer the only one to access that information?

ChevyChat would or could not tell me anything beyond the fact that the car was "in the shipping process" and that the dealer was the only one I could contact for further information. I don't know of anything else on line that provides progress information.

You can have your dealer activate OnStar, then you have to get the app and sign up. As long as the cars been started within the last 72 hours, I think, you can see where it is. If it shipped by train, your dealer can get you a rail car number and you can track it using the automated system.

There's no way to access the GM portal unless you have a dealer friend or buddy up to one of the forum dealers. Even then, they can't track it like OnStar.
