Two friends of mine just returned from Spring Mountain and they said the insurance is only available on non-Z-06 cars. If you drive a Z-06 and tear it up then it is all on you.
Unless you drive with your eyes closed, you will not need the insurance. I say that, because I think a couple of the attendees when I was there were driving with at least partially closed eyes and even they didn't go off-roading.
Seriously, the track is very forgiving, and the instructors manage the driving sessions in a very professional and controlled manner. The chances of you going off is very minimal. The chances of you going off and doing more than $2k of damage are extremely unlikely.
I did the ZR1 class 1 few years back. Call you insurance agent and see if they cover the 8K deductible, mine did. If I crashed the car I did not pay a dime .
I will be there next week and am trying to find out about the clothing to wear while driving. HPDE I have been to so far require long pants and long sleeve shirt. With temps over 110 degrees, and a comment I saw on this site about wearing shorts & tee's; I am wondering and hoping that shorts & tee's are okay.
I sent the question to Spring Mountain, but haven't heard back from them. Can someone please help me out on this?

Shorts and tee shirts are fine. The instructors wear shorts and tee shirts.
You will have the AC and seat fans on.

Well, some of us are pushing the envelope and trying to find the limit. I can assure you my eyes were wide open and I went off track.

Shorts and a tee shirt were just fine, coupled with some running shoes. It's very informal; wear what you've brought. Might want some sun protection, either in terms of sun screen or an ultra violet resistant shirt.
There is only one small place on the track with a wall anywhere nearby, where is probably the only place to do some real damage assuming you don't rear end somebody. I am returning for level 2 in September and will probably skip the insurance. Even without the extra protection, you're only liable for 8K which probably isn't the end of the world for many C7 owners.
