Any pitfalls of long term storage? (ie 6 months, garaged)

I am planning on leaving her plugged in with a tank full of ethanol free gas and a fresh coat of crystal seal.

Anything else I should do?

Spend a few min sniffing for leaks then drive.

Nope sounds like you got it all covered. In the Northeast we over inflate our tires 5 lbs. or so but I assume you are storing it in Florida so loss of pressure due to cold temperatures should not be an issue.

5 month winter lay-up every year with no more prep than mentioned above. I just throw a good car cover over it to keep the dust off.

In addition you might consider over- inflating the tires to about 40lbs in case you have a slow leak.
