OP, I went from an 04 coupe, (A4, dual roof package, 1SB Pkg w/HUD, mirrors etc. and CD changer). I purchased a certified '14 in January of this year. I wanted and got a 2LT, Z51, NPP, M7 with Nav. It also came with Mag ride, which was not on my must have list, but it should have been, very glad I have it. I wanted chrome wheels, got silver painted and now I kinda like the painted silver. They're much nicer than the C5 painted silver wheels. The ONLY option I have that I could do without is the yellow painted calipers. Black would have been easier to keep clean and IMHO look better, but that's how it came. I'm not going to repaint them. The one option that didn't come with the 2014 but I may add is the dual roof package. I have the painted roof which is a must have here in NC, but I used the transparent roof in the winter on my 04 so I think I'm going to go that route with the C7, but that's an easy aftermarket upgrade.
Going from a non-Z51 C5 coupe (that I really liked) to a Z51 C7 coupe is a HUGE upgrade. Just sayin'

C7Jake car looks great. I. I . bruce fan being Springsteen fans were thinking a like I am planning on going with A8 and your comments close friend of mine in HS and beyond had a couple Celicas, both the Celica and the Supra. I have to say the Surpa really impressed me in that era. It was actually a very nice car. So much so I was contemplating buying one as my very first new car, but the price was so outrageous I could have bought a vette for less money. I couldn't afford either so I bought a Formula, duel tops are the same thing I was thinking . Is it worth spending money on extra top when you can only use one at a time or in my case usually not at all. L8ter heated/ac seat are a must for wife and PDR and MRC is already marked down.

I ordered mine yesterday.
If I have to say only a couple of must-have stuff:
NPP, 2LT pkg.
My local dealer had 2 Corvettes in the showroom. One had NPP, the other one didn't.
Just the look itself was different as night and day. So much better with NPP.
And needless to say, 2LT has so much more stuff than 1LT. I sweat a lot, the ventilated seat was one of the must-have for me.

Must haves for me ... 3lt, napa leather, z51, mag ride, stripes, painted top, twilight blue package!
Could do without painted calipers, competition seats (mulan leather), custom rims (outside the tb package), carbon fiber (any), carbon flash (any), custom sill plate, wheel center caps, museum delivery.
Fascia protectors, splash guards, and other add-ons, can be bought later, I ordered them with the car.

OP - we all have different tastes, so our advice on specific options isn't worth anything.
This is your fun car/kickazz sports car. Check every single option box you want and can afford. Make it like you want it. Compromise on your daily driver/sedan/family car without regret. Make your sports car what you want it to be.
Only advice I would give you on a specific item is this: until GM's supplier gets its schet together with the A8, avoid that and get the M7 for trouble-free hooliganism.
