OP, I went from an 04 coupe, (A4, dual roof package, 1SB Pkg w/HUD, mirrors etc. and CD changer). I purchased a certified '14 in January of this year. I wanted and got a 2LT, Z51, NPP, M7 with Nav. It also came with Mag ride, which was not on my must have list, but it should have been, very glad I have it. I wanted chrome wheels, got silver painted and now I kinda like the painted silver. They're much nicer than the C5 painted silver wheels. The ONLY option I have that I could do without is the yellow painted calipers. Black would have been easier to keep clean and IMHO look better, but that's how it came. I'm not going to repaint them. The one option that didn't come with the 2014 but I may add is the dual roof package. I have the painted roof which is a must have here in NC, but I used the transparent roof in the winter on my 04 so I think I'm going to go that route with the C7, but that's an easy aftermarket upgrade.
Going from a non-Z51 C5 coupe (that I really liked) to a Z51 C7 coupe is a HUGE upgrade. Just sayin'

Fascia protectors, splash guards, and other add-ons, can be bought later, I ordered them with the car.
OP - we all have different tastes, so our advice on specific options isn't worth anything.
This is your fun car/kickazz sports car. Check every single option box you want and can afford. Make it like you want it. Compromise on your daily driver/sedan/family car without regret. Make your sports car what you want it to be.
Only advice I would give you on a specific item is this: until GM's supplier gets its schet together with the A8, avoid that and get the M7 for trouble-free hooliganism.
