Just got my z51 7-speed manual this past friday. Absolutely love it! I've had manuals my whole life, but my last one was a '14 civic si...so yeah..completely different car
One thing I noticed about this car is the clutch chatter/noise when I push the clutch in during slow stop'n-go driving (like in parking structures and etc). Usually I noticed this happens under light load or when slightly accelerating in either 1st or 2nd gear.
A little clutch chatter is normal at first when you drive a manual you're not familiar with. Over the next month or so I predict you'll discover the subtle nuances associated with a proper clutch release, and you'll learn how to be smoother.
My experience was the same as yours for the first few days or so, and I've been driving manuals for 4 decades. I continue to get smoother all the time 4 months later. Once you gain more experience, I don't think you'll be talking about clutch chatter any more.
If you're experiencing it when you depress the clutch, it's probably because you're staying on the throttle a bit, and it's a matter of learning the proper coordination of throttle and clutch.

I don't think this is clutch chatter. Clutch chatter is a jerking motion when first engaging the clutch. This sounds more like gear rattle, which is perfectly fine on the modern manual transmissions with their light gear oil. It doesn't sound great, but is perfectly normal.
Whether it's "clutch chatter" or "gear rattle" you can entirely eliminate the noise you're hearing as you smooth out your technique.
You can, but requires more clutch slipping, and I am not willing to sacrifice clutch wear for a little noise. Every GM V8 car I have owned with a manual from 1995 on has had gear rattle. I don't pay any attention to it anymore.
