I also have a light grey interior, I purchased Lloyd's Black mats and they look great. The OEM mats are thin and cheap and the Lloyds are thick and the black does not get dirty as quick as the grey. Since the carpet is also grey, the grey mats are too much grey and the black mats look so much better. Several vendors on the forum sell the Lloyd's mats and some offer free shipping. I purchased mine from CCA, free shipping, great service. CCA is a forum vendor.

If you want something that will really protect the floor area of your car, consider getting a set of the Weathertech floorliners. I have them in both of our DDs and the fit very well and are well made.
The option of using black floor bats would work also, but won't offer as much protection.
I always purchase Lloyd mats. They are great and the company stands by their product unlike any company I've ever worked with. I bought two sets of mats for my c6 the first set got a hole
In them after a couple of years where my heel would rest. Sent a pic to Lloyd and they sent me not one but a pair of mats completely free and didn't even ask for the old ones back. Same thing happened a couple of years later with the second set and again they were replaced without issue or question. This isn't he norm with the mats btw. The sneakers I wear just don't seem to get along with the carpet that they use. Almost no one else has ever had this issue that I know of. Buy Lloyd mats from any vendor you feel comfortable with and you'll be happy. I bought from a vendor who is no longer a forum vendor so
I'll refrain from suggesting you buy from him and give forum vendors a chance at the sale.

I think the black would look really good with the gray carpet in your car. I recently bought these Lloyds mats from CCA. Much better quality than what comes with the car from the factory.

So i have the new GS for a few days and i see
that the light gray mats are going to get dirty,
and look tacky faster than most other colors.
Would you buy backup mats , same color?
Or I was thinking about buying black mats and
putting them in car right away?
also i so Lloyds, but what vendors have you
bought from with satisfaction.
I have identical interior and bought black Corvette mats from the Corvette God in Redwood City. They look great and I'll put light gray in when/ if I sell it. Have heard only great things about Lloyd's.
On my C6 which had the light Cashmie interior I got clear mats that protected them. Later if I went to a car show I'd take them out & put in my spare Lloyds log mats. Worked for me.
Since I really dont care too much about the floor looks I put Weather Tech liners in 3 day after I bought the car. I leave them in year round. Amazingly, I have had compliments on them. Maybe not the most impressive but certainly the best protection. Original mats in original plastic in storage.
Check out Exact mats. Web site. They make plastic protection mats custom cut that go over stock mats with plastic clip to hold in place. Sold in sets of two or just one. Very reasonable price.

I did the same thing. Easy to clean and offer great protection.
OP,
I had light gray in my C5. Your concern is valid, the mats will discolor from normal use. I now have a C7, Kalahari interior and considered buying Kalahari mats to replace the OEM black mats, but recently purchased and installed Lloyd's mats in black. Like them very much. Santa is bringing the Lloyd's mat for the storage early next week. In your shoes, I'd buy Lloyds in light gray and keep the OEM mats in storage for the day you part with your C7.

I have had the Floorliners in several other vehicles, and they are great--particularly if you're going to use your car heavily and not spend a lot of time cleaning.
