Signed up for the end of January, any advice from those that have taken the Class?
Must have's: driving shoes?

Driving shoes are not needed. Any flat soled shoe or even a trainer is more than sufficient. Dress comfortably and maybe bring a few snacks. Also, bring a SD card (32GB or smaller) for the PDR. You will probably be beat after the first day. Not many choices of restaurants, but I recall them recommending a winery/steakhouse. As for the casinos, well they pretty rough to say the least.
If you forget to bring an SD card, they sell them at Spring Mountain. The school itself is an experience you won't soon forget. I was there December 13-14 and I still can't get the grin off of my face.
Winery is good but pricey. Same with Stockman's Steak House at the Nugget Casino. Saddle West Casino has a decent restaurant and a full dinner for two capped out at around $25.
Nugget is the only casino in Pahrump that has gaming tables. Minimum bets are very low making it fun rather than wallet depleting. Down side is no "no smoking" tables/areas.
If you are into guns, Armscor/Rock Island Armory and Front Sight Firearms Training Institute are also located in Pahrump. There is also at least one golf course.

Breakfast and lunch are provided both days. They do have a basic dinner after the first day of class but when I was there it was pizza so my wife and I decided to go elsewhere. I can't help you with the strip bars. I didn't see any but I wasn't really looking for them either.

For years I had promised my kids that when my daughter turned 21 I would bring both my kids to Vegas. It just happens that this is the year so it's a win win!

I was there in August and while it was toasty, it was not unbearable. The cars are air conditioned and of course the buildings are. With the relative humidity near zero most of the time, as long as you are not standing in direct sunlight, it's not bad at all. And it cools down a lot in the evenings.

The restaurant at the winery is called Symphony's. I dig their 8oz Fillet with bearnaise sauce. Obviously a large selection of wines. We actually went there again a couple months after I was at the class. Rented a Cayman S for the drive out. Spent the afternoon at the lake Spring Mtn Tiki bar, and dinner again at Symphony's. Stayed at some hotel casino which was ok, perhaps a tad "Walmartish". You don't travel to Pahrump for the casinos...
If you have your own balaclava and helmet bring it. They have helmets, but I get the "bowling shoes" feeling using communal helmets that many people have sweated in before you
