I don't have my 17 GS yet so I can't go look, but I think it would be on your invoice for car if dealer gave you a copy or might be on sticker on driver door or door jam. Worth taking a look until someone else replies with better info.

I have two build sheets for mine (2017) but I don't see a build date. I already got the build date from Cust. Svc. here via the sticky, but was just curious. If not on the build sheet, just ask them giving VIN# or Order #.
