Why not use the stock Aero Panel? It sits in the middle of the grille and is removable so it doesn't block air flow during track driving. The plate will mount right to the panel.

I have a remote "Show N Go " on my C5 and planning on getting one for my C7 if car ever gets built. Show N Go folds down when you don't want it shown like at cruise night / shows. Been on car for 6 years and no problems.

That won't work on a Grand Sport or Z06 because you cannot mount it with a splitter installed. The OP is specifically looking for something that works with the GS and its splitter.
The only one I know of is mentioned in this thread, but it's rather pricey at $180.
I really like the ZL1addons front mount that uses the tow hook location. I think its a huge improvement over the aero panel thingy. I don't know if I'd classify it as quick release but there is just one big allen bolt holding it on. I keep the big allen wrench and the tow hook that goes with it in my hatch.
