Verts w/M7 ???

You are very vague about what car you are actually looking for "convertible with M7" could be any of 12 trims (base, Z51, Grand Sport, Z06, in 1/2/3 LT/LZ trims). You'll have a much easier time finding a Grand Sport than you will any other model as that is the best seller these days. If you check the forum dealers you'll find a few in stock.
I checked MacMulkin and they have some, but to give you an idea of the numbers game you are playing:

I ordered my M7 'vert from Mike Furman at Criswell, and had it in less than 8 weeks.
1) If you wait till after the deadline with the intent to order...to be honest, at that point I'd just wait until late winter 2017/2018, unless you live in a warmer climate. No need placing an order when 10" of snow is forthcoming.
2) Based on what I've seen and read, some dealers are more knowledgeable than others. I'd do research on that which is as easy as going to the dealership and talking to them.

Looking at the Grand Sport Collector Edition Registry statistics gives a little insight I think. A lot of the cars were ordered by dealers, not by individuals (I don't have stats on that, but it's the feeling I have).
Of the 935 that we have data on, only 20.9% of them were M7's.
You're looking at Verts of course. Of that same population of cars, only 2.7% of the total were Convertible M7's (26 cars).
Further support of this would be the data that was presented at the Bash not long ago.
2017 Stingrays: 81% Automatics
2017 Grand Sports: 79% Automatics
2017 Z06: 71% Automatics
They didn't break down Convertibles, but you get the idea.
They are out there, but you have to look for them.
Another point (my speculation) is that a lot of folks that want to take their cars to the track are driving M7's. Can't take the vert's to the track....
