It is personal choice, my Laguna Blue convertible came with the gray with my interior and top were gray too. I painted my calipers to Red. Go with what ever floats YOUR boat.

Everyone has red calipers for a reason. Had black calipers on my black C7 with black wheels. You couldn't see the wheels or calipers. Had grey calipers on my red C7 z51. Again, hard to see the calipers. Like how the red calipers look on my white Z06 with red interior.
im not sure which color choose with my silver coupe 2lt not z51 with red and black seat with chrome z51 wheel
i find that we see a lot the red galiper

Go to the GM "Price and Build" website and play around with the options, viewing it from several angles. Then, if you like the red best, decide if it is worth $600 to you. It won't run or stop any better any way you go.
I'd suggest going with red. I did on my Shark Grey. I've taken that as a styling queue to add red highlights to other places on the car. This kinda ties things together. Your silver, like my grey, doesn't jump out at you like some colors. However they do seem to lend themselves to color accents.
red calipers, red wheel centers, red Corvette script on wheels, red Dragon stickers on the rear side windows, red Corvette script on front splitter. Considering other red highlights.
