The build date is not encoded in the VIN.
If you have a friendly dealer, he can run a VIS report on the VIN which gathers GM's own records, and that report will give you the build date (and a ton of other useful info too)

Door sticker has Month and Year, but not Day. You can get the exact date from any Chevy dealer. They can look it up in the GMVIS system. This GMVIS report will give you all options, build date, all services performed, etc. Very interesting info.
