For two people, the coupe has a lot of trunk space.

Well, you have the luxury of a hatchback. I'll bet you've got the kitchen sink in there somewhere, too. Could you do it in a vert?

Yes.

It does take some serious Tetrus skills, however! Two people, enough luggage including a cooler, a couple of cases of wine, and a king-sized pillow; all with the top down. This particular trip was over 7,000 miles (I've done longer in a Vert).

I did ship a 9x12 rug and a bunch of throw pillows home.

I know YOU could. I was wondering if OP could. We've also mastered it--including space for new shoes she accumulates on every trip. These things (below) make it easy:

Pro tip: Your wife could snag an extra pair of shoes if she starts the trip barefoot!

Yup. I'm in the middle of a 4-week road trip from California to Washington DC and back. We have 3 C6's and 3 C7's. All but one with two people in the car.

Been doing it every year for the past 13 years in both couples and convertibles. That is the main purpose for our C7. It is our "RV."

If we buy anything along the way that won't fit, we ship it home.

I don't think anyone said you can't take a C7 on vacation - with its storage space it works well. The biggest problem I would have in using mine is the lack of seating space for our two kids.
