Driving in Sport mode vs. Tour mode is louder, and it delivers a bit more power (along with handling). But if you peg the sound output to "Touring" and move the driving mode to Sport or Track, and it still sounds like you're in Touring, do you lose any power compared to when the exhaust flaps are fully open? I would think so, but am not sure. Vice versa, if you leave the sound pegged at Sport but are driving in Touring mode, do you have more power than having the sound on Touring since the flaps are now open more?

Hmm, the 5 hp gain from NPP open vs closed occurs at WOT near the top end >~5000 rpm.
Makes no difference where it is set above a certain rpm NPP butterflies are open! My rough estimate from observation is in Track (where I have mine set to be regardless of drive mode) is ~1700 rpm. In Sport from past observation it may be ~2200 rpm and perhaps Touring was ~2500 rpm.
Therefor above ~2500 rpm the power is identical regardless of Mode setting and max occurs at high rpm an extra 5 hp which you will NOT feel! Frankly the exhaust restriction from a closed NPP at ~2000 rpm is not a factor in hp generation at that low gas flow volume so the difference is sound!
rule of thumb you can only "feel" by the seat of the pants a 10% hp difference. 5 hp is not perceptible and likely would make little difference on the track as well driver variation would be a more important factor.

So based on what you're saying, if I have it set on Sport/Track but have sound management set on Touring, I'm not losing any HP, right?

Yep, once past ~2500 rpm the butterflies are open fully regardless of Touring or Track! The exhaust gas flow below ~2500 rpm is low enough even at WOT that butterflies opened or closed would have little of no affect on HP! It's at high rpm where exhaust restrictions or lack there of have a benefit in HP.
Note NPP operates either fully open or fully closed there is not in-between position.
