I have a 2019 GS with the dry sump engine. It's still in the break in period I've not had the had the 500 mile oil change yet. Is This why the tech tech starts to show yellow at 3500 rpm? My 2015 was different it would show yellow at low rpm when the engine was cold and the red line would move higher as the engine warmed. Will the 2019 revert back to similar behavior after the 500 mile oil change or is this normal behavior for the 2019?

You are correct. After the breakin period the tach will show yellow-orange-red until the engine is warm. Once it is warm it will just show red. Kinda neat seeing it slowly move to higher rpms as the engine warms
As others noted it will move up to the temperature controlled marker behavior once you pass 500 miles.
Note that this marking on the tach is recommended only both during initial break-in and later warm and RPM is not actually limited to these lower RPM markings so the owner can still foolishly cold start an engine with under an hour of lifetime operation and immediately run it to the governed redline once the car is in gear. The coolant temperature driven tach marking is a good reminder for proper operation but before truly spirited driving you should also let the oil warm up which will take longer than the engine coolant, especially with dry sump versions although the integrated oil cooler does serve as an oil warmer during initial operation helping it to reach operating temp more quickly.
My 2016 Z06 doesn't have a dedicated engine temperature gauge and my normal instrument panel display is locked in sport mode with the coolant temperature gauge in the DIC area and oil pressure and oil temperature pocket gauges to either side of the tach. I like to have at least 170 degree oil before running the engine near governed RPM.
