OK, I've had my 2015 convertible for a week now and just when I think I have all the bells and whistles figured out, another one pops up. I know when you change modes, the dash and heads up change along with it. When I restart my car, the HUD displays just the two digit speed. I can change it to match the mode but shouldn't it START in whatever mode it was turned off in? Is this tied into the memory seats at all? They are giving me a little grief as well. The car shouldn't have to be running to set the seats right?
The dash and HUD can also be "locked" into a single display mode if you wish. Using the arrow buttons under your right thumb, scroll left, then down to settings, then to center, select display mode, then right and choose Tour, Sport, Track, or Link to Drive mode.
Similarly you can lock steering effort and sound management to a single mode or link to drive mode through settings on the radio display.
Locked display, steering, and sound management selections will persist on restart. As noted above only Tour and Sport drive modes will persist. All other modes will reset to Tour.
My car has the HUD set to display according to driving mode as well. It will also remember my previous mode between restarts unless I shut the car off in track mode. If left in track mode it will default back to touring mode. I typically drive in sport so this isn't much of an issue unless I forget and leave my car in track mode when shutting down.

Did you shutdown your car in track mode?
Weather and Eco modes will also default to Tour mode. It's better to just decouple the Information cluster from the mode dial.

I have my hud set to sport, dash and sound to track, steering to sport and and i drive 95% of the time at tour. When i switch to sport mode and switch back to tour the hud does not change. I dont see a lot of reason to keep those adjustments controlled by mode.
That is your preference. Others have different ideas. The cool thing is that most personal preferences can be accommodated with a few configuration settings. I wish I could change steering effort on my DD - but some engineer / marketing group decided on light steering effort.
Can you configure a set up for a mode and have it saved but leave the rest? For example, have tour mode left as is, but if I want sport mode to have steering stiffness of touring and the sound managment of track, can I do that and when I go back to touring or eco, they retain their original settings?
Nope. You only get one choice, not a choice for each drive mode. But - I leave steering in Track, exhaust OFF (Track for 2015+) and fuse pulled, display and HUD in Track / Performance with 4 gauges displayed. I mostly drive in Tour due to rough roads in the area.
