Correct, but I've been told this has to be done after shutdown with fob still in/near the car and perhaps with the door open.

Yes, that is how it's done. And it is a quick and simple step to disable the alarm and auto lock
system without having to go into the infotainment system and step though several screens to
accomplish the same thing and then reverse the process to reactivate it. And when you start
the car again, it cancels automatically.
Myself, like probably most of you I have the system set to auto lock and alarm when I park and
walk away. However, when I park in my garage I prefer the car unlocked for my convenience.

I just leave my trunk open and windows open. I almost always have to take something out anyway, or access something somewhere in the car later, or add something to the trunk before the next trip.
The doors don't lock (with auto lock enabled) , even if you shut the trunk after the car times out.

Not me. I want to lock the car on my own. That's how mine came, and that's what I'm used to on my Mercedes' for many years now.

Over the course of time with the last few generations of the Vette there have been many dozen of threads with I was locked out. No way for me I want my cars/trucks locked I will do it myself.

We've been driving a C6/C7 that lock themselves, for the last 13 years/200k miles. Never been locked out or close to it.
When I get dressed in the morning, the fob goes into my pocket and stays there. If I've got my pants on, I've got my fob. End of problem.
But just in case, I've also got an extra trunk key, hidden on the outside of the car so well that even the Tech who works on our Corvettes hasn't found it. If somehow I get locked out, I can use that key to get back into the car. And there's also a spare fob, wrapped in aluminum foil to hide the signals, deeply hidden somewhere else inside the car. Also nice to have if a fob stops working on a long trip.
There are some valid reasons why people may prefer to "lock it themselves". But fear of being locked out shouldn't be one of them

I'm in the no-auto-lock camp. I like pushing the button on the FOB and getting the reassuring blink of the lights. Plus when washing / detailing the car I found it frustrating if the FOB was in the garage yet just out of range. My wife's Infiniti has a good solution - there is a button on the door handle, if the FOB is in your pocket (or her purse) just pushing that button locks the car. This way the FOB can stay put yet still lock the car with no effort.
What I can't figure out is why the horn honks after filling my C7 up at the gas station and then immediately getting back in to start it. I believe the car thinks the FOB is still outside.

Wow with your amount of protection you are prepared for problems. Like you the fob is in my pocket. You have been here a long time so undoubtedly you have read the many posts about being locked out, IT HAPPENS. I don't have a fear of being locked out I just posted about the many people that accomplish it.
I have went to many Carlisle's and other shows and find it funny listening to the cars locking and unlocking when their owners are wandering around in range. Like I said when I want my vechicles locked I do it myself. Most times it is not locked. My garage is under my house and quite secure. Parked at a car show most times the top is down, I do not leave valuables in my vechicles often so not locked. Most times I have a vert (Vettes and other cars) and if they think something valuable in car a soft roof is easy to get in. About the only time my vechicles (Vettes, other cars and trucks) are locked is when were traveling and stop to eat at a restaurant. Started driving in 1962 and that the way I do things, Doubt I will change now!

this happened to me at Blooming Gold in June left the keys on the console and the car locked me out. Never again lucky for me OnStar was able to UN lock it.
