I just checked my car on the way to work. Once you're in track mode, the second push puts you into the submenu for track mode. Pick any of those modes and launch control is active there's nothing else to do, and there's no mistaking that you're in the correct mode. The second push puts you into the sub menu in track mode.

That they could have made an indicate making it clear that launch mode is active. They are saying, for example, that active handling is active but they don't say that launch control is active (directly on the screen). IOW it may be that whenever you see that screen launch control is also active (though I don't know where that is stated though I haven't looked) but it would be crystal clear if there was an indicator there. As an M7 owner, I feared not properly activating launch control (since there's no actual indicator that it's on) and flooring the car with the clutch in.

Its not difficult for me at all. I've done it. You seem to not understand that its not active until you put it in gear, and quickly floor the car; that process is the "on switch" which is why you don't see the light. Its "available" not "active".

Ugh! Don't be dense! Change "active" to "armed" if you need to to understand this simple concept. There is no indication that LC is armed and ready for action. As an analogy when I'm in Google Voice and I set Do not Distrub, there's an indication that DND is on. Technically DND is not "active" until a call comes in, but there's an indication that it's "armed" and most people would think that DND was active. I'm not sure why you are fighting me WRT a desire to have an indicator light to assure me that LC will keep the RPMs from redlining due to it not being set properly.
BTW I've done it too! I've put it in gear and floored the car and LC did stop the RPMs at 4000 or so and I "launched". But I sure would have appreciated having an indicator light telling me that LC was armed, active and ready to work, sorta like Active handling or whatever.
Has anyone used the Launch Control feature with the M7 stick? I understand you make sure the car is in Track Mode and then you press the console Mode Selector button a couple of times to disconnect the nanny controls and then floor the gas pedal (which will max the RPM to around 3,500) and let out the clutch quickly and away you go? I guess I'm just a big chicken to try it. I'm worried that those giant 335 meats in the back will bust up the rear end or axle shafts?
Launch control uses the nannies. Without the nannies you would be sitting still in a cloud of rubber smoke. Track Mode with the sub mode set to Sport 1 will get you some stability control, NO traction control and Performance Traction Management which manages the launch.
Biggest problem is unlike the A8 cars you need to be on a level road or the car will start moving forward or backward when you have one foot on the clutch pedal and the other on the gas pedal. Of course you could use the parking brake and hope it breaks free like GM says it will do. However, they say don't do that to the parking brake very often.
I haven't tried it but having attended the Ron Fellows Owners School, here's the instruction handed out by the school when we graduated. Apparently in the 2 day school there is insufficient time to let each student try it. There are YouTube videos showing how.
1. Select any PTM or competitive mode.
2. With the steering wheel straight, depress the clutch and select 1st gear.
3. Depress the accelerator to the floor rapidly and let the engine rpm stabilize.
4. While holding the accelerator to the floor, dump the clutch and hold the accelerator to the floor. Now shift to 2nd gear in a normal fashion.
The computer sorts out the wheel spin to protect the driveline parts.

I've used it multiple times, and it works good. Could I possibly be slightly faster on my best run, yes, but LC makes for a consistently good launch. I used it at the last 1/2 mile event I did, and pretty much every run was the same MPH. Almost makes it too easy.
