Bought my 2014 3LT last year and I noticed it coming apart by the defrost vent. Told dealer to fix it before I would take it, they did, replaced whole dash. No issues with replacement so far, but does worry me and I've thought about trading for a 2LT if I can manage to get a deal where I don't lose my ***.
Mine is a 2014 with 3LT. No problems here. That's one perception that a lot of folks get that spend time on CF. If they read about a few cars with the same problem, all of a sudden its a major problem that affects every C7. Far, far from reality.
2016 vert, 12k miles. Mine is pulling up. Dealer said it would be fixed. GM said it is 27 days out of the original warranty, and the certified preowned does not cover it. Dealer wants $3300 to fix. I started a case with customer service, was told I would hear back from them in 1-2 days. It's been a week, and nothing yet. I went up the chain and sent an email explaining the situation to a VP of customer service yesterday. Haven't heard back on that either. It's looking likely this will be my first and only vette.
IMO it's just like the A8 studder issue, the GS/Z06 bent/cracks wheels issue, the noisy rear-end issue, the bumper/fender paint peeling issues and others in that a very small % (perhaps 1%>5%) of owners experience the problem however they're blown up the the forum to make it seem like wide-spread issues.
But having said the above, I wouldn't take the chance on a 3LT interior, when you can get a 2LT or 1LT that's no risk.

i was a few week out of my warranty and chevy customer service said they would partially pay for dead screen. Guess what they changed their minds and simply said your out of your warranty. And they knew i had bought 5 new corvettes in 12 years. They simply don’t care just horrible
We took delivery of our 2014 convertible Jan 2014. It is a DD that is parked outside in the harshest sun imaginable during the week. And summer temps 100 F +/- for several months. We use a barely damp cloth to wipe it down and a cheapo sunshade from Costco. Looks like new today.
No problems on my 2016. Garage kept and use a sunshade if outside. Florida heat and humidity are brutal. Was at the chevy dealer a while ago getting an oil change and looked at a new 1LT they had parked under the overhang. The dash looked like it had 2 bubbles starting to show on it.
2014 Z51 3LT here -- I definitely have the dash coming up at 35k miles. Whether its luck or not, it just plain sucks. Thankfully mine isn't BAD yet -- but it's getting there.

My 2015 Z51 3LT with Torch Red is separating/bubbling right of center towards the windshield. 17,000 miles so I guess I'm screwed. It's in the garage for winter now since I have knee surgery next week, so I guess I'll go to my favorite leather guy early spring and see what he has to say.
Car sat on Chev. dealer lot in Rochester, NY for 12 months before being shipped to Chev. dealer in Houston, Texas, where it sat for 2 months before I bought it 11/2017. Garaged ever since.
Shows no evidence of bubbling or pulling away. The car certainly sat in direct sunlight for basically months before being sold. So far, so good
