The value of a C7 ZO6 Convertible M7 in my opinion will go up after the c8 z06 and then the c8 ZR1 comes out. But to say it will be more valuable than i c8?? Only time will tell

Almost impossible to say for sure what the prices will do. Either one will be a great car to own and enjoy. I seldom buy cars wondering what the value will be many years down the road as I tend to want something new after a number of years.

OP didn’t ask about value, just whether a C7 vert will be “more desirable” than a C8. Is a C4 vert more desirable than a C5? Is a C5 vert more desirable than a C6? Is a C6 vert more desirable than a C7? There’s your answer.
The C8 vert has the "cowling" behind the seats, which in a tracked open top car would hide the roll bar. Not to mention the C8 vert hard top itself. If the C8 is allowed to track on HPDE days by the SCCA without adding a rollbar, it may be a much more popular car than previous vette verts.
Desirability has alot to do with scarcity. The numbers are not pretty for the C7 verts with respect to scarcity.

For a purist wanting a true top down experience, the C7 will be more desirable than the C8. Other than that people usually are more attracted to the latest and greatest.

Put me in the purist category. After seeing what the C8 vert looked like, I bough a 2019 C7 vert.
To each their own, but to me the C8 vert with top down looks like the Batmobile .............
In my opinion, the C7 convertible will always be worth just a little bit more than the C7 coupe - and that's about all you can plan on. Own one (and in fact, any Corvette) because you like it, not because of what you think it's worth.
That's a difficult question the answer. I like the looks and styling of both the C7 and C8 convertibles over the coupe versions. I wish I could have bought the C7 convertible, but the storage issue was the roadblock for me.
Love my 16 Z51 3LT Vert....added the extended warranty and have coverage to 130,000 miles....I dont really worry about the value, plan on keeping her....she has 45k on her now and she still feels new to me. I have sat in a C8 and I prefer the cockpit area of my C7, the C8 is better for taller people but thats not my problem...it felt a little tighter around the hips and waist area to me.....But not putting the C8 down at all it is an awesome car!!
My limited sports car history has been Vert, Coupe, Vert, Vert, Vert, so you know how I vote! But one criteria for me is that, when the top is down, I do not want to see anything in my rear view mirror but the road. My Audi S5 had back seat headrests, and removing those was the best tweak I ever made. The C7 fits this design perfectly. The C8 convertible not so much. I doubt a C7 will ever be worth more than a C8, but I am sure not trading this one! My retro red corvette, a front-engine, Torch Red, manual ragtop with chrome wheels!
