2019 Stingray 1lt: Oil change at 500 miles at dealership (probably didn’t need it). Check oil after every fill (check about 10 minutes after engine shutoff). Didn’t burn a drop first 500 miles. Now have 2900 miles and still no oil loss. I’m not complaining but I wonder If they overfilled? I do not “baby” the car.
If the oil was overfilled, the level would be above the full mark on the dipstick. (Happened on my 2014 - now I tell them to add 9 qt and give me #10).
Sounds like they filled it to the correct level.

The trim level of your car makes no difference.
Is your engine wet or dry sump? Only the dry sump requires a 500 mile oil change due to the depletion of anti-foaming agents in the oil from the gaskets of the dry-sump.
Good on you that you have been checking the oil level at every fuel fill during the engine break-in period (1500 miles). That's more than most folks do. It proves you have at least skimmed the OM. Many cars may burn excessive oil during this period. Some continue, some quit doing that. Most don't consume excess oil.
My '14 never consumed oil while I owned it over 100,000 miles until I traded it in.
Mine burned about a liter of oil during the first year. The dealer showed me a service bulletin stating that is in the high end of acceptable. Since then it hasnt burned oil at all.
OP if your checking the oil level properly, you have no issue.

No need to worry about issues that don't exist as your C7 shouldn't burn any noticeable quantity of oil in just 2900 miles. Not burning any oil is a good thing.
Chevrolet knew what it was saying when it said warm the engine to 175 degrees F. They meant water temp and 175 is all you need to accurately check the oil. I keep mine between the middle and top dots.
The Owner Manual on our 2017 Z51 doesn't seem to specify whether they want 175 oil or 175 water. Oil temp makes more sense, since you are measuring the oil.
Here's a picture of the factory label on our 2017 Z51 and it clearly shows the symbol for oil temp.
