Sold my C-4 I owned for 17 years and bought my 2016 Z51. Changed oil for first time using what owner’s manual says, Mobil one SAE 5W-30 And Mobil one filter, then I read that G.M put out notice that we should be using OW-40 oil. I also read something about bypass values in oil filter and that I may have not used correct filter. Totally confused as usual!! Any clarification much appreciated.

I wouldn't sweat it too much. Either Mobil1 5W-30 or 0W-40 will work and recommended. I'd just swap out the oil filter the next oil change with PF64 filter.
0W-40 Dexos 2 Mobil 1 became the standard for MY '19, and is usable with any C7 LT1 engine. The 5W-30 was the oil spec'd for '14-'18 MY engines and still may be used except that it must be swapped for 15W-50 for track use then reinstalled after the track.
The Mobil One filter M-113 filter is the one originally spec'd for the C7 LT1 with a 17-18 psi pressure relief, but the M-113A has the higher (20psi IIRC) pressure relief which meets GM specs for the 1LT.
I've still got my factory 5w-30 sticker on my 2018 filler-cap and said oil in the car. If you want, you can just change to the correct filter now; that's no problem.
