I have 8K miles on my c7 and the touch screen it hard to use (ie pressing the buttons). My 2018 ss camaro is super light to the touch. Is this the way vettes are or is it messed up?

The touch screen in my '14 is not overly sensitive nor difficult to get it to react to the touch. If yours is difficult to get to work, may be time to get it checked out.
If you want to see an overly sensitive touch screen, check out the ones put in the FCA vehicles - just a slight touch sets them off.
The Corvettes touchscreen is quite old, the buttons react to touch similarly to an old capacitive screen. You don't have to push hard but you do have to touch the icon and hold it for a second.
The 6th Gen Camaro touchscreen is a newer design than the C7. I usually say that it's a 1/2 gen newer electronics package (it is). I've owned a few C7's and a couple Camaro's and the screen is higher resolution and glass touch on the Camaro. Now if they would've only NOT TILTED the dang thing!

On my 2019, there is a touch screen calibration procedure.

Its 2014 tech... which in smart phone years is like 20 years old.
It is because it is a resistive touch screen as opposed to a capacitive touch screen. The benefit of resistive is that it is essentially nondestructive and won't wear out. You obviously know the drawback. Personally I'll take durability over the easier to press capacitive type. But you shouldn't have to touch that much more aggressively than a capacitive. There could be something wrong with yours, or it could be because you are used to a capacitive type of screen.

I agree, the touchscreen in my 2017 is not very responsive, sometimes I need to tap it twice to get it to respond.
But, as I understand, these older soft-surface touchscreens are resistive, the newer capacitive hard glass touchscreens are the more responsive type.

That calibration just centers it, nice to know where that is though, thanks. I just went out and tried it, its not too bad but its 40F outside, not sure if temp matters. The other day it was 75F and I had a hard time with it.
