So today i backed my 2019 GS vert out of the garage to clean up my snow blower and straighten up the garage a bit. Anyway I left the car running for 15 minutes in the driveway and it just shut off by itself. I got into the car and it started right up and I pulled it back in and put it away... I didn't take it for a ride because the roads are still full of sand and salt .Has anyone experienced this before or is my car "special"?

Did you use Remote Start to start the engine prior to moving your GS out of the garage? If so, the default idle time is 15 minutes.
If you started normally, pulled the GS outside and left it idle with the remote key not in the vehicle, it will idle for up to 30 minutes before shutting down.
If you started normally, pulled the GS outside and left it idle with the remote key in the vehicle, it will idle for up to 60 minutes before shutting down.
Just an observation on my on my 2016 base Stingray coupe. If I remote start the car and the remote is in my pocket outside the car it idles for ten minutes then shuts off. Maybe each year and model is a little different? Probably. I have never tried the other scenarios with the fob inside the car.
15 minutes does seem a little short for the extended idle time after a normal engine start and with the remote outside of the vehicle, based on the OM. Perhaps those timers are a bit variable, just me guessing.

What you experienced is in the manual under Extended Parking.
Extended Parking
It is best not to park with the vehicle running.
If the vehicle is left running, be sure it will not move and there is adequate ventilation.
See Shifting Into Park and Engine Exhaust.
If the vehicle is left parked and running with the Remote Keyless Entry (RKE) transmitter outside the vehicle, it will continue to run for up to half an hour.
I wouldn't worry, its definitely your idle timer expiring. Depending how you started the car or settings it can and will shut off after 1after
if it starts and has no codes or anything your fine.
My 2019 OM states 15 minutes, which can be extended another 15 minutes for a total of 30 minutes.
Pages 33 & 34 of the 2019 OM: Starting the Engine Using Remote Start: 1. Press and release Q on the RKE transmitter. 2. Immediately press and hold / for at least four seconds or until the turn signal lamps flash. The lamps flash to confirm the request to remote start the vehicle has been received. During the remote start, the doors will be locked and the parking lamps will remain on as long as the engine is running. The engine will shut off after 15 minutes unless a time extension is done. 3. To drive, have the RKE transmitter in the vehicle, press the brake pedal, and then start the vehicle.
Extending Engine Run Time: The engine run time can also be extended by another 15 minutes, if during the first 15 minutes Steps 1 and 2 are repeated while the engine is still running. An extension can be requested 30 seconds after starting. This provides a total of 30 minutes. The remote start can only be extended once per ignition cycle. A maximum of two remote starts, or a remote start with an extension, are allowed between ignition cycles. After two remote starts, or a remote start with an extension, the ignition must be turned on and then off before the remote start procedure can be used again.
Although I can't test it since I don't have remote start.

You are correct, I apologize, they probably changed from the 2019 model year, otherwise ten minutes was the standard for all my GM vehicles up to 2018.

Yep, I think you are correct about 10 minutes being the old standard.
I just checked the OM for my 2016 Camaro SS. Remote start allows the engine to idle for 10 minutes and it can be extended to 20 minutes.
