Ok so I had a conversation with a guy today about the 2019 corvettes. What is the general opinion from you folks about the value of the 2019 corvette being the last front engine car and especially in a manual??? Do you think they will be anymore desirable than any other year because of the C8?

Not sure what you mean by 'more valuable'. Like most cars, it will be a depreciating asset for the foreseeable future. They aren't going to go up in value, only down.
I def think they'll be more desirable therefore my "valuable". I bought my '19 manual specifically bc: 1) I don't care for the C8, doesn't look like a Vette. 2) Even if I liked and could afford a C8, I HAVE to have a manual in a sports car and C8s will never have a manual. So for me, I targeted 19's carefully and specifically. I think the last year (and 1st year) of these cars would bring more value but that's my opinion and my wallet speaking.

C7s for the most part haven't been depreciating assets over the last year or so, however most will agree that the bubble will burst in the not too distant future.

Perhaps a little more desirable by a few as a result of the manual fanatics out there who refuse to accept that manuals are or will soon be a thing of the past. Having said that, it will most likely take 40 years or better, to actually have substantial collector/investor value.
IMO, the C8 Z06 is going to be more valued by collectors/investors over time as most likely being the last high HP gas powered Corvette.
By the way, I'm a manual fan myself, having owned many of them over the years including now. But a good chance I will never purchase another.

For perspective, I'm 40 and I swore that I would always keep a manual car around because I truly enjoy the mechanics of driving stick. Even though I have always wanted a mid-engine sports car, the C8 wasn't enough to make me want to change my mind.
The Z06 however might be the car that does it. I'm a little bit in love with it.
More desirable depends on Corvette enthusiast, if it is just a car guy in general looking to get into corvette than probably C7 would be the "desirable" one because it would be the newest, but as others have said the ceiling has already been seen and passed. Manual only matters to a select few (and I love manuals) but it will not add more value as times goes by.
I think the 2019 C7 will hold some special value but way down the road and probably just for certain configurations. Certainly an M7 GS or Z06 for instance but we are talking many years from now. Of course now is a good time to make a few bucks with a C7 as the market is a bit crazy.
There will always be manual enthusiasts out there even if the number is dwindling. Being that the C7 is the last vette with a manual, it will have special value to those manual enthusiast who love vettes. Add in the fact that the C7 is the last true convertible and if one wants a true convertible in a stick, the C7 is the latest and greatest vette of em all.
They made way too many of them to be valuable in the short term. Some of the cars I see going for high dollars are like the GNX. I think less than 1000 copies made. My V-Wagon seems to be holding pretty well. 1600 copies total. There were close to 9000 manual C-7s in 2019 alone I think. Now ZR-1's, they will be.
The Z06 however might be the car that does it. I'm a little bit in love with it.
To me the C8 Z06 just like the C7 ZR1 is a street legal upgrade designed primarily for track use. Great cars but impractical as daily drivers.
For one 20 inch run flats are bad enough, I can only imagine the rough ride wider 21 inch run flats on city streets will give you

For those that may want a manual tranny the C7 with that feature may command a higher resale price. But I do not think it will be anytime soon that any significant bump in price would occur.
