I don't remember this from my GS and I tried to do a search, but wasn't coming up with much.
I like my Infotainment screen to be on Audio. Every time I turn it off and restart the car, it defaults back to all the home screen apps. Is there a way to keep the screen on the previous selected setting after shutting the car off?
I touch the power button for a second. Long enough to only turn off the sound but not change the screen to the corvette badge. Then, when I restart, I just have to adjust volume.

As far as I know and remember (I don't use my GS much) whatever I left it at when I shut it off was there when I turned it back on. As a matter of fact the more I think about it yes whatever I left it at because most of the time I use my I Pod and that is what is on when I start the car. Same goes for the radio, if I left a FM station on that's what I get upon a restart. So no, what is going on in your car is not normal.

My 2016 always returns to the screen I left it on, even if its the swap phones screen. I've got whatever the latest update was for 2016 (where it added Android Auto).
Well that's annoying. Nothing I hate more than a trip to the dealer. I'll make extra sure I'm not doing something to cause it. I've only driven it a few times but it does seem like I start the car up and the main screen shows all of the icons, not audio where I remembered leaving it.
My C5 would reset settings on startup when the battery got weak. You might check your battery health if this is a new problem.
It's not resetting anything. It just seems to go back to the Home screen after it's been turned off instead of staying say, on the Audio screen. All of my stations and settings stay saved. But it was a good thought!
Just for ***** and giggles I just went into my car and yes the radio station I had on last was the first thing on the screen.
Hahaha! I won't be able to see where mine restarts at for a couple days. I'm really hoping I was doing it and just didn't realize I had left the screen that way. But it's happened a couple times where I've thought..OK, why am I having to put this back on Audio?
OK...my car definitely goes back to the main home screen on start up. After thinking about it, I wonder if this could be the reason as there is nothing wrong with anything in the Infotainment system beyond this one thing...
Because I'm short, I hit thr start button to move myself forward to reach the peddles in order to start it. Maybe it's pushing the start button twice that's doing it?
It dawned on my later, so I haven't gotten to test out my theory. Really hoping it's as simple as that. I do not want to take the car to the dealer!! Especially when everything is working just fine.
Have you looked in your owner's manual to see if there is a setting for the infotainment behavior?
Wondered that as well. I actually did read the owners manual, but you know how it is...you scan read it and hit the areas you really need/want to know. I'll take another look to see if I can find something related.
OK, since it was making me crazy but I don't like cold starts for no reason, I grabbed the owner's manual and set out to determine if there was a setting somewhere. I wasn't seeing anything so I decided to try a software update first.
I put the car in auxiliary mode and my Infotainment screen was set at the Audio screen, right where I left it. I went ahead and checked for an update while I was in there and all was up to date.
So, it appears I'm doing it when I hit the start button twice to move my seat up. I may need to start doing it from the door instead or reset my exit setting a bit closer. I'm just glad it was me and I don't need to take it to the dealer for something stupid.

My 2017 GS does the same thing. Some time back a thread was started on this subject but I don't recall a resolution being drawn from it and I wasn't able to find it with a search. I usually want the Audio Aux. screen to show, in my case music title, artist, etc. from a thumb drive plugged into the port behind the Infotainment screen. Since the app screen shows instead my habit is to hit the center Menu button and twist the **** 'til it shows Audio, then hit the Menu button again. PITA.
I don't recall if my 2015 Stingray had this issue.

I tried that in my car even thou I have never started my car that way. I still get the last screen I was on so I don't think that is your problem.
