The only way I know how to get the date the car rolled off the assembly line is to have a dealer/or friend run the GMVIS report on the car. At the end of the report it will tell you the exact date the car was built. Here is the end of my report:
The sticker on the edge of the driver's door will tell you the month. If you want the specific date, you'll need to ask a dealer to run an IVH (used to be called VIS) report for you.

Some previous owners keep all kinds of paperwork on their cars, so if you received a bunch and you see the "Certificate of Origin For A Vehicle" the build date is also on it. Here's mine and where that date is located:
