I would suggest adding sound deadener while in there. In my mind once I gutted the interior to install the insulation I wanted to only do it once so I added Killmat and Dynaliner along with the insulation kit.
All sound deadening material and processes are NOT created equally. I strongly suggest an "Advanced search" across the C7 Forums. Some are no better than a cheap piece of carpet cut to fit the back floor, for instance.

Fred - If you are asking about the thick pads that insert behind both seats and the cargo area, then I tried them and found them to be lacking. I went the Crazy Cowboy route and installed the kit myself over a weekend. I went hole-hog and bought the best kit he sells. installed on a 2019 GS coupe and the kit does cut down on the noise and offers better heat insulation. The Cowboy does installs at his home in FL or he does fly into an area to do several installs if there is a large enough demand. if you decide to install yourself, take your time, study his instructions and pictures, take you time, and be careful removing and installing the carpet and trim. Oh, and by the way, take your time. Pics from my install. Good luck.

I have have debating about getting Crazy Cowboy to do my 2019 Coupe, he is only about 50 miles from me, so no issues getting the car to him, just need to find the time and some spare cash, thought maybe I would wait until I put new tires on to see how they affect the noise level in the car.
Fred, sounds like maybe you need to plan a vacation to sunny Florida once you thaw out up there in the spring.
Bought my 2018 coupe in the fall of 2021.. Took a 180 mile trip and the interior road noise drove me crazy. Parked the car for the winter and ordered the top end Crazy Cowboy kit. Had a professional installer put it in this spring with some extra door insulation. He was amazed that the gutted interior was nothing but a bare plastic tub. Amazing difference! Worth every penny. I would have sold the car with out it.
I had the Crazy Cowboy do my 19 GS and the outcome was excellent. I only live about 30 miles away so took it to his home and 6 hours later he was done. Super nice guy and couldn't tell he was ever in the car when I got it back. I didn't have him do the wheel wells but plan to go back to him to have those done as well. Car is noticeably quieter and feel less heat coming up off the console. I would highly recommend him.
I've used Dynamat Extreme as a base layer in my C5, C6, and now C7.
I added a layer of B-quiet Vcomp on the C5 with great results as well. https://www.b-quiet.com/collections/...products/vcomp
I covered both layers with the standard carpet followed by a nice Lloyd's mat for a 3rd layer.
With my C7, I used the Block-it kit as the second layer on top of the carpet, followed by a Lloyd's mat.
I have unilateral hearing loss. Therefore, for example, background road noise makes it impossible for me to hear the car radio or have a conversation with a passenger. I fully understand that the C7 is not a sedan, and the road noise is expected. My objective with the sound deadening installed product was my way of managing my hearing issues and still enjoy my C7.
PS: There is a really, really long thread about Crazy Cowboy and his insulation/sound deadening kits and many folks who have done this.
My 2019 GS is my 3rd vette that I've done with his kits and IMO its well worth the time and money. For me, it was a 2-day project taking my time. His instructions are very good and he is great with answering any questions you have along the way.
I used the system from Crazy Cowboy. I installed it over three days - I was in my late 60's and worked at an easy pace.. Install wasn't hard just took my time. The system made a big noise reduction. I would do it again. In a post about CC system I listed the before and after noise levels.
I did a mini vacation and drove to Florida. Being I have a couple bum knees, I went with Crazy Cowboy. I drove to his house @ 8, he started about 8:10 finished about 1:45 plus I had him do my rear wheel tubs. I'm very pleased with the outcome and would have him do it again.
