Default Wheel Offsets?

So I have a 17 z51 with factory wheels, I was looking at other aftermarket wheel options and I have no idea what an "offset" is when it comes to wheels. I think the stock wheels are 56mm in front and 79mm in the rear. What does that exactly mean? and If I replace them with something other than those offsets would I be in any trouble? How would it affect the car? If it is something close can I get away with it or does it have to match exactly? I also hate that the Stingray/z51 are a different bolt pattern than the Grandsport/zo6, wheel options are so limited on the 5x120.65 bolt pattern.

The offset is the difference between the center line of the wheel and the mounting face. Positive numbers move the wheel closer to the center of the vehicle. If you reduce the number on those wheels you will start approaching the fender. Measuring your current clearance will tell you how much offset change you can live with.
