I have a chance to buy a low mileage z51 but the dash needs to be replaced. It has bubbled and curled, dont ask me why. Long story short, is this a major job to take the dash off and put the new skin on ? Thanks
Yes! The customary cost is $3-4k. This is not uncommon with the 3LT and 3LZ leather dash, not much of an issue with the 1LT, 2LT and 1LZ and 2LZ vinyl dash. Not sure about the ZR1 dash.

You should also figure out if there is a replacement dash available.

This is a very good point. If you can't find one, an auto upholstery shop may still be able to recover it with new leather but you'll want to check first.
Good on you for checking here before making your purchase.
Trim level 3LT leather wrapped dash failures and the frailty of the factory wheels on the wide body models (GS & Z06) are the two of the most common and expensive C7 pitfalls one should know about when considering a C7 Corvette. Oh, and AFM valvetrain failures too.
I was quoted 2500 by an upholstery shop when I considered a 3LT. No warranty.
also keep in mind that if the car is a 3LT or 3LZ, the door panels do the same.

Door panels too? Live and learn. If it hadn’t been for the bad reputation of the 3LT I probably would have popped for it on my GS.

Part cost. A new dash when you could buy one wasn't cheap. You have $100 or $200 heater core. The dash was something like $1700.

Yes. A new dash will need to be installed. R&Ring the whole of the dash.
How bad is it? You might be able to fix it with some fabric glue and syringe if its just starting to pull away. I did it to mine. Plenty of YouTube vids showing how to do it.
