Howdy,, when shifting from 1st to 2nd (manual 7 speed) should there be a slight dogleg type movement with the shifter to the left before moving it back to 2nd gear. I'm looking to buy a 2014 Z51 that has that shifting weirdness.
The shifter will self-center at the nuetral position to be between 3rd and 4th. If you dally as you shift from 1st to 2nd or fail to keep a little leftward pressure on the shifter as you make a slow shift, then it would be completely normal for you to have to dogleg the shifter back into alignment with 2nd gear gate. I would say absolutely normal and I have a Z51 7MT. Enjoy the row!!
The "Skip shift" has been reprogrammed OUT of my car or I would have gotten the CAGS! That "feature" SUX!!!! As for 1-2,
I typically don't use 2 when it's "cold" as it IS a PITA to get into. I use 1-3 a lot, but I'm not a "racer" so.....
When I shift, I never grab the shifter though, 1-2, hand goes at the top and just pull straight back, goes right in. I never grab te shifter, except maybe to go into reverse, I just push/pull with my palm <shrug>
Just drive it as if it were a sports car and skip-shift never rears its ugly head.
I've never understood the angst when the 1-4 skip shift pops up on the display. It just reminds me to give it more throttle to get past 20 MPH before making the shift to 2nd. Sport Mode and my unicorn Borla 60547 X-pipe make it more fun.

I have a 2014 m7 i have best 1 to 2 shift action when i cup the shifter from the right side and maintain a light leftward pressure as im shifting into 2nd. Dont grab the shifter and pull on it like a st10.
Turn it off along with DOD/AFM. MGW with Redline D4 is the hot lick for effortless shifting even when its cold.
Why bother? DOD on manual cars has to be turned on by the driver so there is no reason to program it out. Skip Shift only occurs between the speeds of 14 mph and 20 mph if the driver is light on the throttle, so it only forces a shift if they are driving behind a slow driver and aren't paying attention to what they are doing. If caught out with the shifter being moved toward 4th push forward into 3rd and then pull it to 2nd. This can be accomplished in the blink of an eye so nobody, but you know it happened. Why spend more than a penny to avoid things that you can avoid with no effort at all?

As rdbragg says, the shifter is centered on the 3-4 position. Anything else will require a little push to the left or right. I've driven older manual's ( 4 and 5 speeds) all my life and the 7 speed took me some getting used to.
