I’ve had the same question. 2019 Ceramic Matrix Gray Metallic, Cab, M7, 3LT black carbon & alcantara, red deviated stitching. I’ll just blissfully think I’m one of one!
At a new job recently, a co-worker proudly proclaimed that his 2010 Viper with white paint, red stripe, 6 spoke chrome wheels and tan interior with red accent stitching (and possibly a few other odd options) was one of one and therefore even more valuable. Out of courtesy, I held my opinion on that matter.
Given the various options and all the possible combinations, the possibility of another exact match is a mathematical improbability. But that doesn't make a car worth any more than another one, unless a buyer was obsessed with that exact configuration.
I have a 2015 z06 / z07convertible that I am trying to determine the "rarity", if any, of the options combination.

The short answer is no, there's no longer a way to determine specific C7 (or early C8) rarity.
The longer answer is this service USED TO BE available via the NCM for up to two MYs past, until COVID. They stopped doing it during COVID (circa 2020). When they started-up again (circa 2021), they went from going back up to two MYs, to only going back one MY. When I last spoke with Betty @ NCM Archives, she suggested using the Extrapolation method, described in the Corvette Black Book, to estimate how many were made "like yours." Good luck!
